Green Velvet Cupcakes
Ingredients
- 2 1/2 cups all purpose flour
- 2 cups of sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tbsp cocoa
- 1 tbsp salt
- 1 tbsp baking soda
- 2 eggs
- 1 cup oil
- 1 cup buttermilk
- 1 tbs vinegar
- 1 tsp vanilla
- 1 oz green food coloring
- butter cream frosting
- shamrock sprinkles

Method
- Pre-heat oven to 350 degrees F.
- Grease your cupcake pan
- In a medium sized bowl, whisk the eggs, one at a time. Slowly add wet ingredients, then dry ingredients, and mix both on medium-high. Once the mixture has been whisked into a thick green batter, let it settle.
- Fill the cupcake liners about halfway full.
- Bake about 10-15 minutes or until well formed (use the toothpick trick).
- Let the cupcakes cool completely before frosting with butter cream frosting.
- Decorate with shamrock sprinkles, green M&Ms, or candies!
